Why Black Beans Work So Well

Black beans are the ideal foundation for a vegan burger because they hold together reliably while developing a crispy exterior during frying. Unlike some legumes that tend to crumble or stay soft, black beans maintain their structure and create that desirable textural contrast between a golden crust and a tender interior. Ingredients:

Olive oil
2 large onions, peeled and thinly sliced
1 tsp salt
400g tin black beans, not drained
80g dried breadcrumbs
1 tsp dried garlic granules
1 tsp dried onion granules
1 tbsp chipotle paste
2 tsp Dijon mustard
1 tbsp tomato ketchup

4 burger buns
Vegan mayonnaise
Iceberg lettuce
Finely sliced tomato

Method

Heat three tablespoons of olive oil in a medium frying pan over a medium flame. Once the oil is hot, add the sliced onion along with half a teaspoon of salt. Cook, stirring regularly, for approximately 20 minutes until the onion becomes significantly reduced and develops frazzled, caramelised edges. Transfer to a plate and set aside.

While the onion cooks, pour two tablespoons of the liquid (aquafaba) from the tin of beans into a small bowl or mug and reserve. Drain and rinse the beans thoroughly, then tip them into a large bowl and crush them roughly with a fork or potato masher, leaving some whole or in substantial chunks. Add the breadcrumbs, garlic granules, onion granules, chipotle paste, mustard, ketchup and another half-teaspoon of salt. Mix thoroughly with your hands until the ingredients are evenly distributed; if the mixture seems too dry, incorporate some or all of the reserved aquafaba until it reaches the right consistency.

Divide the bean mixture into four equal portions. Roll each portion into a ball, then place it between two sheets of baking paper and press firmly to create a patty roughly 10 to 12 centimetres wide (slightly larger than the burger buns works well).

To cook, pour two tablespoons of olive oil into a medium frying pan and fry two of the burgers for about six minutes total, flipping them once halfway through or when the underside turns crisp and golden brown. Remove them from the pan and set aside. Add another two tablespoons of oil and repeat the process with the remaining two patties.

To assemble, split the buns and toast them lightly. Spread a generous amount of vegan mayonnaise on the cut side of each base. Layer with one or two leaves of iceberg lettuce, then place a bean patty on top. Add a couple of thin tomato slices and finish with a quarter of the caramelised onions. Crown with the bun lid and serve immediately.
